Kurma (mild creamy yellow sauce, no bits)

Masalla (cream and almonds, very light spices and butter ghee we add tandoori sauce for flavour similar to tikka, making a red sauce without the spice)

Bhuna (a lovely tomatoey stock based sauce with chunky onions, tomato and peppers, this sauce can be made mild/medium, or hot)

Rogan Josh (quite a thick stock based sauce with lots of flavour and some spices, has onions and garlic and is topped with pureed tomato for a little sweetness)
